About Hiruzen Winery
This winery makes mellow wines mainly from the Hiruzen Yamabudo mountain grape, a species unique to Japan and cultivated locally in Hiruzen. Although it was once considered difficult to cultivate and brew with, their Yamabudo wine has won several competitions and the winery is leveraging its appeal.

About Hiruzen Winery

Product Features
Oak barrels made in Allier in south-central France are extremely compatible with the grapes. Each barrel has its own character, with subtle differences in the speed of aging, the intensity of the aromas released by the barrel, and the color and flavor of the finished wine. The power of the robust oak brings out the richness and flavor of the delicate wine.
Detail-Oriented Brewing
The winery cultivates Yamabudo, the raw material for its wine, with their own hands. Although it is extremely difficult to produce wine from these grapes, staff aim for a high-level product. Workers need to be able to constantly adapt to changes in the environment and materials.

Material Characteristics
Yamabudo are difficult to cultivate and produce wine with. The fruits are about the size of the tip of a pinky finger and contain three or four seeds. Compared to ordinary wine grapes, they are less juicy, so more grapes are needed. Due to the difference in sunlight hours, Yamabudo grapes have a sweeter taste and darker skin color here than in the Tohoku region.
