Product Features

We recommend trying the fresh ricotta. Since the cheese is painstakingly collected ladle by ladle into a colander, the juiciness, tenderness, and milky texture are kept in just the right balance. Fresh ricotta and cheese are like tasting the milk of the land itself. Ricottaro strives to express the pleasant aroma and taste of fresh milk fermentation, and we believe that is what you will feel the most here.

 

 

Detail-Oriented Brewing

Bringing the joy of Italian cheesemaking to the unique environment of Hiruzen. By cultivating fermentation bacteria in-house while researching and following traditional production methods, Ricottaro aims to create a cheese unique to Hiruzen. All craftsmen can do is merely add a few guiding hands to the workings of the microbes. For this reason, the owner pays careful attention to temperature control to create the right environment and determine the timing for processes.

Material Characteristics

The cheese is made with rich milk from Hiruzen Jersey cows. Jersey milk's high cream content gives the fresh cheese a thick, sweet, rich, and buttery flavor, and it can produce a sticky, dense texture in aged cheeses.
