Founded in 1893 in Hokubo. Known for its traditional "Taisho no Tsuru" sake, the brewery mainly uses Asahi and Omachi rice varieties, which are representative of Okayama. The clear, medium-hard water with fireflies dancing in the air is used to create a strong, crisp sake.

Product Features
Out of all the breweries in Okayama Prefecture, this one uses the hardest natural water. Focused on the raw materials: rice and water. The brewery explores the appeal of sake brewing and aging that takes advantage of the hard water.
Detail-Oriented Brewing
The key is how vigorously the mash is fermented prior to pressing. Brewers must work closely with microbes and pay attention to their needs. After pressing, the temperature is strictly controlled according to the quality of the sake.

Material Characteristics
Asahi rice produced in Okayama Prefecture, which is the root cultivar of standard Japanese rice, is used for the sake. Another Okayama rice, Omachi, the root cultivar of sake brewing rice, is also used in varied proportions for each sake, and the water from the brewery's well is harder than any other brewery in Okayama.
