Product Features

For the rice, only Omachi, the oldest cultivar and an original variety of sake rice native to Okayama, is used. The brewing is conducted using the oldest traditional method, “bodaimoto.”

Detail-Oriented Brewing

Omachi rice is difficult to process because it is a native species. Bodaimoto brewing, which incorporates natural lactic acid bacteria, requires time, labor, and experience because of its invisible microbes.

Material Characteristics

Omachi is more fragile and difficult to handle than other sake rice. In sake, it provides a delicious and complex flavor. The brewing water is taken from the underground Asahi River, a first-class river, and is soft water that gives the sake a mild taste.
